Sweet potato bites

Ingredients

  • 1 large sweet potato - skin off, cooked, mashed and cooled
  • 1 tablespoon flaxseed meal
  • 1 tablespoon nutritional yeast
  • 2 heaped tablespoons of coconut flour, you could also use almond meal.
  • 1/2 cup parsley or spinach finely chopped
  • 1/4 cup nut milk, milk or water.

Method

Step 1. Preheat oven to 375 degrees.
Step 2. Peal and boil sweet potatoes, I cut into chunks. Cook until soft. Mash when cooled.
Step 3. Add the ground flaxseed, nutritional yeast, flour, spinach/parsley and milk. Mix well until a thick “dough” forms
Step 4. Line a large baking tray. Scoop a tablespoon of mixture and roll into oval shapes with wet hands.
Step 5. Place into the oven for 25-30 minutes
Step 6. Enjoy!  

Cooked and cooled sweet potato is a resistant starch so brilliant for feeding our gut microbes! And it can be saved in fridge for a week. The perfect snack.
